Beecher’s Handmade Cheese, which has been making and selling cheeses in the Pike Place Market for the last seven years, opened a cheese-making factory, retail store and restaurant in the Flatiron district of New York City late last month.
Mercer Island resident and owner Kurt Dammeier has leased over 8,000 square feet of space on three levels in a landmark building. Included is a mezzanine with tables for 25, where customers can take sandwiches, salads, panini, soups and other items sold on the main floor.
The rest of the ground floor retail area will have American charcuterie for sale and 18 feet of glass cases with American cheeses, including Beecher’s own.
The Beecher cheeses include Flagship, a milder jack-style cheese, fresh cheese curds, and for the first time for the company, a washed-rind cheese they’ll call Flatiron, which is being made in seven-pound wheels and should be ready by Labor Day. You can see it aging behind glass in the basement level restaurant, the 85-seat Cellar, where small plates — including the company’s signature mac and cheese — offered with embellishments like crabmeat will be served.
