Farmers market to offer organic ice cream made from scratch

Ice cream made from scratch will debut at this year’s farmers market on Mercer Island with pastry chef Adria Shimada’s ice cream truck, Parfait. The farmers market opens on Sunday, June 12.

Shimada uses organic eggs, milk, cream and sugar to make her custard base. She also makes the candy that is added to the ice cream, hand-rolled waffle cones and dessert sauces from scratch.

Each batch of Parfait ice cream is made from recipes created by Shimada. Her custard base is organic and contains four ingredients: milk, cream, sugar and eggs. Parfait’s dairy, eggs and produce are all sourced directly from small local farms within 150 miles of Seattle. Shimada’s intention for Parfait is to make ice cream with the same integrity as a high-end French bakery and to re-envision the ice cream truck as a culinary experience, one that offers wholesome desserts.

Ingredients include locally roasted coffee beans, berries, mint and stone fruit. Shimada and her team hand roll her signature waffle cones and make the candy in-house, including butter toffee. Ice cream flavors include Mint Stracciatella, Fiore French Roast Coffee and Decadent Chocolate, as well as rotating and seasonal flavors: Meyer Lemon, Toasted Hazelnut, Fresh Nectarine, Cinnamon Stick, Orange Star-Anise, Fresh Blueberry, Ballard Bee Honey, Milk Chocolate Chai and Earl Gray Tea. Parfait also offers seasonal vegan sorbets including apricot, raspberry and pear.

The Parfait truck, which runs a dipping freezer on a green system that does not require generators to operate, has been present at farmers markets throughout Seattle, other regular neighborhood locations and special events. Parfait started in 2009 and also offers a home delivery service, in-truck profiteroles, ice cream sandwiches and a line of corn syrup-free dessert toppings.
